Bistek Tagalog is the Filipino answer to a great steak — thin-sliced beef marinated in soy sauce and calamansi juice, then pan-seared and topped with rings of sweet caramelized onions. The balance of citrus, salty soy, and tender beef is absolutely spot-on. It is a crowd favorite that looks as good as it tastes on the tray and disappears faster than you would expect.
