Chicken Inasal is one of our most-requested party tray dishes — and for good reason. We marinate the chicken in a blend of calamansi, lemongrass, ginger, and annatto oil before grilling it over an open flame, following the same technique our family has used for generations in Pangasinan. The result is smoky, tangy, and deeply savory with a beautiful reddish-orange color from the annatto. It’s the kind of dish that disappears fast at any Filipino party.
